Grilling indoors without filling the room with smoke

An electric table grill is designed to keep smoke low, but the food on it has a say too. Most indoor smoke comes from fat, sugar and oil burning, and all three are easy to manage.

Where the smoke comes from

On a charcoal barbecue, much of the smoke is the fuel itself. On an electric grill there is no fuel to burn, so the smoke comes from the food: fat and juices dripping onto something hot, sugary marinades catching, and oil heated past the point where it starts to smoke. Cut those down and the air stays clear.

Choose and prepare the food

  • Trim visible fat from meat. A strip of fat on a pork chop is the biggest single source of smoke on the grate.
  • Pat everything dry before it goes on. Surface water spits and steams, and wet food sticks.
  • Oil the food lightly rather than the grate, using an oil that tolerates heat, such as sunflower or rapeseed.
  • Brush sweet glazes and honey marinades on in the last minute or two, not at the start.

Pick the right heat

The GrillMate has five heat settings. The highest suits a quick sear on lean food such as chicken breast, prawns or halloumi. Sausages, burgers and anything with more fat cook better, and more cleanly, one or two steps lower, where the fat renders gently instead of spitting.

Look after the drip tray

The removable tray under the grate is there to collect fat before it can burn. Empty and wash it after every session; old fat left in the tray is the usual reason a clean grill starts smoking the next time. Some table grills are meant to have a little water in the tray, and some are not, so check the manual before adding any.

Give the air somewhere to go

Switch on the cooker hood or open a window, even for a short session. Never cover or disable a smoke alarm to grill indoors; if it goes off, lower the heat and look at what is on the grate.

Clean it before it cools completely

Unplug the grill and let it cool until it is warm rather than hot, then lift out the grate and wipe off residue while it is still soft. Burnt-on bits from last time will smoke again next time.

Safety first. Keep the grill on a stable surface away from curtains and shelves, keep children back while it is hot, and follow the manual supplied with it.
